New Logo!

So this has been on my to-do list forever and this week (thanks to the extra push at Camp Do More...more on that later) - I finally got it done! Chalene Johnson had recommended http://www.fiverr.com/ a while back for help with doing some of those "little things" that come with branding yourself so I flipped back to that page and found a great example of some custom logos. Logo_lady (http://fiverr.com/users/logo_lady) did an amazing job and the logo is now featured at the top of my blog! Check it out! Once I get some pictures / headshots taken, I'll combine it with the logo and you'll see new images on my facebook, twitter, ...all over! If you're working on a business of your own or need a logo, I highly recommend checking her out!

Recipe Thursday: Chilled Cucumber Avocado Soup

I made this last week and it was AMAZING! So good and refreshing! Feel free to play with adding different herbs or other seasonings...just try not to add a lot (if any!) sodium! Enjoy!

Chilled Cucumber Avocado Soup

Ingredients
1 chilled cucumber
1 avocado
2 scallions, chopped
1/4 cup mint leaves, chopped (can be left out)
1/2 cup well-shaken low-fat buttermilk
1 1/2 cups cold water
salt and pepper to taste

Directions
1) Cut cucumber into 3 equal pieces, then coarsely chop 2 of the cucumber pieces. Coarsely chop half of the avocado.

2) Blend together the chopped cucumber and avocado and the mint leaves, scallions, buttermilk, and water until smooth. Taste and season with salt and pepper as needed.

3) Chill soup, uncovered, 15 minutes.

4) Cut remaining cucumber and avocado in 1/4 inch pieces and stir into soup.
