#addicted2acure Recipe Thursday: Mashed "Potatoes" (sneaky cauliflower!)

Cauliflower is a great breast cancer preventing food AND a low fat diet can reduce your cancer risk too...put them together and you have a great sub for mashed potatoes! If this isn't good enough to fool your family, try doing half traditional mashed potatoes and half cauliflower...



Cauliflower "Mashed Potatoes"

Nutrition Info
  • Calories: 68.8
  • Fat: 4.3g
  • Carbohydrates: 6.2g
  • Protein: 2.9g

Ingredients

1 head of cauliflower, trimmed and florets steamed
1/4 cup sour cream
2 oz cream cheese, softened
1/4 tsp onion powder
1/4 tsp garlic powder
salt and pepper to taste

Directions

After you have steamed or boiled the trimmed cauliflower florets, drain and return to pan. Mash well and stir in the sour cream, cream cheese, onion powder, garlic powder, and salt and pepper to taste. Put into a round baking dish, cover and bake at 400 degrees for 20 minutes. Makes 8 servings 1/2 cup each.

#addicted2acure Shakeology and Breast Cancer

So this took a little research but so totally worth it. I preach about the benefits of Shakeology allllll the time. I love the stuff. I feel more energized, my stomach and "insides" feel better...not to mention it's an easy, no-thought-involved, healthy option for at least 1 meal each day.

As you all know, October is breast cancer awareness month and Team Addicted is doing their part with our Addicted2aCure fundraising and awareness program (to donate, click on the image below please!). One of the ways you can help contribute is by placing an order through one of our participating Team Addicted coaches - like me! 100% of my profits from home direct Shakeology orders and 50% of all other orders will be going straight to Susan G. I found this table and I knew I had to share it. Check out these lifestyle recommendations made by the Susan G. Komen organization to reduce your risk of breast cancer and improve your chances of early detection!


Susan G. Komen for the Cure® recommends that you : 
1. Know your risk
  • Talk to your family to learn about your family health history
  • Talk to your health care provider about your personal risk of breast cancer
2. Get screened
  • Ask your health care provider which screening tests are right for you if you are at higher risk
  • Have a mammogram every year starting at age 40 if you are at average risk
  • Have a clinical breast exam at least every 3 years starting at age 20, and every year starting at age 40
3. Know what is normal for you and see your health care provider if you notice any of these breast changes:
  • Lump, hard knot or thickening inside the breast or underarm area
  • Swelling, warmth, redness or darkening of the breast
  • Change in the size or shape of the breast
  • Dimpling or puckering of the skin
  • Itchy, scaly sore or rash on the nipple
  • Pulling in of your nipple or other parts of the breast
  • Nipple discharge that starts suddenly
  • New pain in one spot that doesn't go away
4. Make healthy lifestyle choices
  • Maintain a healthy weight
  • Add exercise into your routine
  • Limit alcohol intake
  • Limit postmenopausal hormone use
  • Breastfeed, if you can

#addicted2acure Recipe Thursday: Salmon Stuffed Tomatoes

Let's fight breast cancer with another great recipe!


How this will fight breast cancer:


- Tomatoes have high amounts of carotenoids and the more carotenoids you consume, the lower your risk!
- Good fats, like those found in salmon, help lower your risk too!

Salmon Stuffed Tomatoes

Ingredients:

1.5 cups wild rice, cooked and chilled
One 15 ounce can salmon, drained and flaked
1/2 cup carrots, shredded
1/2 cup green onions, sliced
1/2 cup cucumbers, seeded and chopped

1/2 cup sour cream (may substitute 1/2 cup plain yogurt)
4 teaspoons juice
2 tablespoons fresh dill, chopped (may substitute 2 teaspooons dried dill weed)
1/4 teaspoon salt
4 large tomatoes


Directions
Combine salad ingredients in a large bowl and toss gently. In a small bowl, combine dressing ingredients and mix well with a wire whisk. Core tomatoes and slice into sixths, maintaining the bottom to create a bowl. Fill tomatoes with salad and dressing mixture and serve.

#addicted2acure Recipe Thursday: Spice-Rubbed Chicken Tortillas with Mango Salsa

For the month of October, Recipe Thursdays will focus on recipes that contain ingredients believed to be key in preventing breast cancer....not to mention they're yummy and healthy!! 


Why this recipe helps your chances against breast cancer: 
For every 0.5 mg of flavones you eat daily, your breast cancer risk drops by 13% and this meal contains 2mg! (flavones: natural substances found in a handful of fruits, vegetables, and herbs)
- The right intake of fiber and folate can help reduce your risk by up to 30%...guess what beans can provide!
- Low fat = lower breast cancer risk!

Spice Rubbed Chicken Tortillas with Mango Salsa


Ingredients

  • 1½ Tbsp brown sugar
  • 2 tsp ground cumin
  • 1 tsp ground ginger
  • ½ tsp coarse salt
  • ½ tsp ground red pepper
  • 4 boneless, skinless chicken breasts (4 oz each)
  • 2 tsp olive oil

  • 2 red bell peppers, thinly sliced
  • 1 lg red onion, halved and thinly sliced
  • ¼ c coarsely chopped cilantro + additional for garnish
  • 4 whole wheat tortillas (10" diameter)
  • ½ c mango salsa or chutney


  • Directions


    1. In small bowl, combine sugar, cumin, ginger, salt, and ground red pepper. Coat both sides of chicken with spice rub. Set aside.

    2. Line baking sheet with foil, and preheat broiler.

    3. Heat oil in large nonstick skillet over medium heat. Add bell peppers and onion (make sure to clean them first...gotta love the EatCleaner products for this!), and cook until vegetables are soft and lightly browned, about 10 minutes. Stir in cilantro, and cover skillet to keep vegetables warm.

    4. Broil chicken about 6 minutes on each side or until a thermometer inserted into thickest portion registers 160 degrees F and juices run clear. Let chicken cool slightly before cutting into ½"-thick slices.

    5. Heat tortillas by placing each one in large dry skillet over medium heat for 30 seconds on each side or until heated through.

    6. To serve, spoon a portion of vegetables down the center of each tortilla. Arrange chicken slices over vegetables, and roll up. Spoon 2 tablespoons of mango salsa over each tortilla. Garnish with cilantro.





    Makes 4 Servings (1 tortilla, 1 chicken breast, 3/4 cup of vegetables, and 2 tablespoons of salsa)

    390 cal, 32 g pro, 45 g carb, 7 g fat, 0.5 g sat fat, 65 mg chol, 5 g fiber, 670 mg sodium

    Prep Time: 25 minutes

    Cooking Time: 22 minutes

    Eyes on our goal and hope in our hearts! #Addicted2aCure


    As I mentioned on Saturday, the month of October is all about breast cancer awareness and fundraising for my team of coaches - Team Addicted. We've set our sights on a fundraising goal of $2,000 and we need your help in achieving that goal! (and make sure you read to the end of the incentive Kristy and I are offering!)

    There are a few ways to contribute to our team's efforts and increase the hope of finding better prevention and cure for those who are fighting breast cancer...check out your options:

    1. A healthy lifestyle is important in preventing many diseases and breast cancer is no exception. Work on improving your healthy habits AND contribute to our fundraising by ordering a Beachbody product from one of our coaches (myself included). Each coach will contribute a portion of their profits to our Komen fund. I will be donating 100% of the profit from every Shakeology Home Direct order and 50% of the profit from all other purchases.     #Addicted2aCure starts now! #breastcancer #komen

    Many of you may remember that last year - about this time even - my mom was undergoing chemo treatments for breast cancer. It was an experience I wouldn't wish on my worst enemies but good must always come from the bad. I learned who my truest friends were, found out how many incredible people I have in my life, strengthened my relationship with my mom, and formed a lifelong bond to a cause bigger than myself.

    Engineers by nature, Mom's news meant a binder was created, Google was exhausted, and link after document after stat after data after report after site after quote was circulated around my family. We had to know everything. No, not everything. ALL OF EVERYTHING. Obsessive, huh?

    During this time, I leaned on my Turbo Sisters more than ever. Kristy, Jaime, and Beth were always there.. checking up on me, offering to make drives and spend time with me whenever I needed it, made me laugh, let me cry....they, along with my love Nate, were my anchor.

    A year later, I have learned so much and am filled with gratitude....and the feeling that i need to pay it forward. That is why, a couple months ago, I starting talking to Kristy about how we could use our information, Beachbody resources, and our passion for this cause ....and out of our discussion came a month long program to raise money for he Susan G. Komen Foundation and share information about healthy lifestyle habits that can lower your risk of breast cancer so fewer have to experience the pain and struggle of fighting breast cancer - either personally or as a co-survivor.

    Breast cancer is terrifying. The stats are grim. The facts are frightening. It can be an all around depressing topic. By now, you should all know I don't do dark and twisty. I may get down sometimes and I won't promise that you'll always see a smile on my face but overall I try to take the positive approach and Kristy does the same so we are on a missionand we're going to do it in the most fun, upbeat way possible!



    So what's this program? How can you participate? Let's break it down:

    - Keep watching my blog for videos and posts about tips on how tl lower your chance of breast cancer.
    - Some of these tips will include information on how particular Beachbody products can help you reduce you risk. Komen Foundation.
