My response to her:
Healthy food doesn't have to be expensive - just buy smart. Watch for sales, buy apples (longest fresh fruit shelf life), only buy what you'll eat right away and try new foods to keep it exciting! Canned tuna and chicken make great last long meal bases and are high in protein which you need. I also love the Thomas Bagel Thins and Arnold Sandwich thins for sandwiches and breakfast. At low carb and calorie counts, I was able to make a bagel, egg white and cheese sandwich with the Thomas Bagel Thins and more than stay on count (Thomas Bagel Thins Plain, Velveeta cheese slice, Great Value Liquid Egg Whites 220 calories, 29g carbs, 5g fat, 18g protein - it was delish!!!). I've been trying out store brands vs. name brand too and so far I can't tell a major difference in everyday ingredients.
The new staple in my fridge: Thomas Bagel Thins
Don't forget your spice cabinet too. For example, egg whites get booooorrrring after a while. Toss on a dash of hot sauce, or salt and pepper and you'll kick it up. Same with your ground turkey, tofu, chicken breasts, etc. Good for a protein burst and spices can help keep it from getting old without adding a bunch of fat and carbs.
Can't wait to see what ideas you have!
